Sicily is the largest island in the Mediterranean and one of my favourite regions of Italy, as well as the destination where I sent my very first group of clients many years ago. Ever since, I have continued to return, drawn back by its extraordinary food culture, fascinating and layered history, dramatic landscapes, and the warmth and generosity of its people.
But what I love most about Sicily is that it never feels overly polished. There is a beautiful unpredictability to the island. A slightly chaotic energy woven through the landscapes, the markets, the conversations, and daily life itself. Things rarely unfold exactly as planned here, and somehow that is part of the magic, although occasionally also part of the challenge when creating a seamless itinerary.
Sicily feels entirely its own. Closer in spirit to North Africa and the eastern Mediterranean than much of mainland Italy, it carries the imprint of the many civilisations that passed through it over centuries: Greek, Roman, Arab, Norman, Byzantine, Spanish, French, and beyond. Baroque towns sit alongside ancient Greek temples, Arab-influenced markets, Byzantine mosaics, and fishing villages that make you feel as though you have stepped back in time.
This extraordinary cultural layering lives most vividly in Sicilian food. Saffron, pistachio, cinnamon, citrus, almonds, aubergines, rosewater, cous cous, and sweet-and-sour flavours tell the story of centuries of exchange between Europe, Asia, Africa, and the Middle East. Pasta alla Norma, caponata, pasta con le sarde, fresh ricotta, grilled vegetables, and wines shaped by volcanic soils and sea air all form part of Sicily’s wonderfully expressive culinary identity.
And then there are the Sicilians themselves. Passionate, proud, warm, endlessly generous, and rarely in much of a hurry unless standing in a queue. Hospitality here is instinctive. Meals are never small. Conversations rarely stay superficial. Food is how people connect, welcome, celebrate, and care for one another.
Sicily is not a place that reveals itself all at once. It unfolds gradually, generously, and always around the table.
Our home and hosts
In the southeastern countryside near Vittoria, Baglio Occhipinti is surrounded by vineyards and fertile farmland. Once a ruined old winery, it has been lovingly restored by our host, Fausta Occhipinti, preserving its original spirit while introducing a simple, understated elegance rooted deeply in Sicilian hospitality.
Fausta is a landscape architect and botanist who, after growing up in Sicily, had built a life in Milan and Paris with little intention of returning home. Everything changed when her father Bruno discovered the abandoned property and invited the family to dinner there one evening, setting candlelit tables among the ruins so they could imagine what the Baglio might one day become.
That vision has since become reality. Drawn back by the opportunity to create something meaningful for her homeland, Fausta shaped Baglio Occhipinti not simply as a hotel, but as a living expression of authentic Sicilian culture, hospitality, and agriculture. In a region where many younger generations have left in search of opportunity elsewhere, she has worked closely with local craftspeople, farmers, and artisans to preserve traditions while helping create a future rooted in the land itself.
Gardens scented with chamomile and almond trees surround shaded courtyards and long communal tables. Rose bushes planted in honour of Fausta’s grandmother bloom alongside flourishing vegetable gardens and orchards designed to nourish both the land and the people gathered around the table. There are spaces designed for gathering, and just as many intended for rest.
Meals are rooted in the surrounding land, shaped by ingredients from nearby farms, local producers, and whatever happens to be growing in the gardens at Baglio Occhipinti itself. Evenings unfold slowly beneath lantern light, with shared wine, often from Fausta’s talented winemaker sister, Arianna Occhipinti, lingering conversation, and the occasional sense that time has quietly disappeared altogether.
The region is also home to Cerasuolo di Vittoria, Sicily’s only DOCG wine, Italy’s highest wine classification, reflecting both the agricultural heritage and contemporary energy of this remarkable corner of the island. Much of the region’s modern wine reputation has also been shaped by pioneering producers such as Arianna Occhipinti, whose wines have helped bring international attention to southeastern Sicily’s distinctive terroir and traditions.
How our days will unfold in Sicily
Days at Baglio Occhipinti unfold at a considered pace, balancing carefully curated experiences with plenty of space for spontaneity, connection, and discovery.
There may be mornings or afternoons spent making fresh ricotta with a favourite local producer, hiking through stunning scenery and stopping to taste olive oil along the way, exploring the UNESCO baroque towns of Ragusa and Modica with local friends, visiting ceramicists and artisan workshops, wandering through markets overflowing with seasonal produce, tasting wine with Arianna Occhipinti as well as visiting one of her favourite nearby producers, shopping for unique local treasures, or foraging for ingredients that may later appear around the dinner table that evening.
Along the way, there will be opportunities for hands-on learning, from fermentation and wine to the flavours, traditions, and rituals that shape everyday life in this corner of Sicily.
There will also be time to swim, walk, rest, read, explore, or simply sit quietly beneath the almond trees and do very little at all.
A special collaboration with
Rachel de Thample
This Shared Table gathering includes a special collaboration with award-winning author, fermentation expert, and gut health advocate Rachel de Thample.
Together, we will explore fermentation using seasonal ingredients gathered from the estate’s gardens and surrounding countryside: grapes, figs, herbs, pumpkins, and more. Along the way, we will also explore gut health and the importance of caring for ourselves from the inside out.
This hands-on session will be practical, engaging, and deeply relevant, offering knowledge, techniques, and skills to carry home long after the journey ends.
